The Story Behind Our Fruitcake
Legend has it this recipe was used on the Canadian National Railway during Christmas time in the early 1900s. Tracey's uncle passed the recipe to her father Ennio, who passed it to Tracey and her brother Blair. Now Tracey's husband Trent carries the torch, making fruitcake according to Ennio's instructions - and this cake has been part of Christies' Christmas production for over 55 years.
This is an old-world cake that deserves to be enjoyed for generations to come. Tracey's uncle swore the fruitcake tasted best after storing it in the fridge for over a year, something you might want to try as an experiment yourself.
