In My Kitchen: J and J Sausage Tray Bake By Lydia
Figuring out something quick (and healthy) to have for supper is difficult at the best of times. Add three young kids on top of that and it makes the daily task seem impossible. Not to mention that our appetite for doing dishes in the evenings is pretty low.
A tray bake with either mennonite sausage or meatballs has become a standby in our house. For veggies we use carrots, potatoes, peppers, broccoli, cauliflower, sweet potatoes, even chickpeas - basically anything we need to use up fast in the fridge. Along with the sausage, we throw everything onto a single tray over parchment paper, drizzle with olive oil, salt and pepper, and serve at the table right off the pan. In our fridge we keep a stock of favourite sauces (Joppie, a dutch-style curry-mayo from Superstore is a favourite) so everyone gets to choose how they dress their plate.
It’s not an overly glamorous dish, but it’s a simple, low-effort meal we enjoy (and can feel good about). This particular tray features J & J Garlic Mennonite Sausage.
